- Destemmed harvest and traditional vinification for the Syrah and Mourvèdre. Carbonic maceration for the Carignan. Aged 10 months in concrete tank. 35-year-old vines, farmed sustainably (cover crops, biological pest control, organic fertiliser, controlled yield of 45 hl/ha), on sandstone and marl soils.
- Food pairing
- On its own, as a soft wine that gently opens up. Also pairs well with grilled beef chop, chicken with morels or vegetable tagine. Serve at 17°C.

Appearance
Beautiful purple colour with ruby reflections.
Aroma
Intense, with notes of light tobacco, leather and sweet spice (clove).
Palate
Creamy, fresh entry that opens onto silky, pleasant tannins, with candied cherry and a hint of menthol. Lasting freshness, with a finish of liquorice and pepper.
About this wine
Olric is the first name of the third Ournac sibling, who currently prefers life as a Parisian dandy – and the cuvée is said to resemble him quite a bit. The wine carries the name «Château» Cesseras, not «Domaine» Coudoulet, because it comes from AOP terroir. The cellar, incidentally, is built into the wall of the Cathar castle in the village of Cesseras.
