A lively, fresh white wine made from 100% Pinot Gris from Domaine Coudoulet in Languedoc, IGP Pays d'Oc. The grapes are harvested at night from 10-year-old vines and traditionally vinified without any oak. Its floral character and saline finish make it a good match for seafood and vegetable dishes.

- Traditional vinification, night-harvested and destemmed, aged on lees (fin) for three months. 10-year-old vines, sustainably farmed (cover crops, biological pest control, organic fertiliser, controlled yield of 40 hl/ha), single Guyot pruning, on limestone clay soil. Plots: Le Loup, La Dinée and Sautel.
