A light, aromatic red wine made from 100% Pinot Noir from Domaine Coudoulet in Languedoc, IGP Pays d'Oc. The grape is grown on limestone clay soil and vinified with gentle extraction to highlight the fruit and easy-drinking character. Best served chilled, it pairs well with white meat, gyoza and fresh goat's cheese.

- Traditional vinification, destemmed harvest, six months on skins. 17-year-old vines, sustainably farmed (cover crops, biological pest control, organic fertiliser, controlled yield of 55 hl/ha), single Guyot pruning, on limestone clay soil. Plots: Les Izardes, Les Près, Moulin des Nonnes, Sautel.
- Food pairing
- A wine with discreet tannins that speaks for itself. With small plates: gyoza, cheese naan or panko chicken. A safe choice with roast turkey and lingonberry sauce, or fresh goat's cheese. Serve well chilled in summer.
