- Hand-picked grapes, whole-cluster fermentation, foot-treading, spontaneous fermentation with natural yeast in open vats, punch-downs and slow infusion. Malolactic fermentation in barrel, followed by 10 months in François Frères oak barrels. Low sulphur addition before bottling (<20 mg/l). 15-year-old vines from the «Les Izardes» plot, sustainably farmed with cover crops between the rows. Limited to 4,150 bottles.

Appearance
Light ruby red.
Aroma
Plenty of freshness, spice, cherry-kirsch with well-integrated oak and a hint of mint.
Palate
Full-bodied, with very soft tannins and fine texture. Plenty of cherry fruit, toasted notes and a fresh finish. A refined wine with complexity.
About this wine
The label was drawn by Henry Ournac in the late 19th century – he made caricatures for political newspapers such as «Le Frondeur» and signed them «En-ry». The label reads «Mélasse 1ère qualité», first-quality molasses: a provocative joke, since molasses was exactly what dishonest merchants added to wine to boost its alcohol strength.
