Winemaking

Hand-harvested and destemmed. Vinified in temperature-controlled stainless steel tank at 25 degrees. The grapes are vinified separately and blended after three months, then aged a further five months in tank before bottling. Average vine age is 56 years, yield 22 hl/ha, and 1,800 bottles were made. Bottled June 2023.
